



After a few intensive days, Tasca de Blanquerna has been rewarded with the top prize in TaPalma 2011, Mallorca's yearly tapas fair & competition.
The "TaPalma de Oro" was awarded to Tasca for the best Tapa "Slow cooked Iberian Pork with almond "Torrija" & soller orange compote" prepared by Head Chef, Carlos Abad. Congratulations to Carlos, Marco and all the team at Tasca.

Ingredients serves 6-8
500g Fresh Strawberries, washed and hulled
3 eggs
2 egg yolks
220g sugar
1 vanlla pod (halved and scraped)
400ml cream
Puree the strawberries in a food processor and set it aside.
In a heatproof bowl over low simmering water (make sure the bottom of the bowl isn't touching the water), whisk the eggs, egg yolks, sugar and vanilla for 5 minutes until it's pale and thickened. Remove from heat and continue beating until it has cooled.
Whisk the cream until soft peaks and gently fold through the egg mixture.
Divide the cream mixture in half and combine with the pureed strawberries with one half. Layer the 2 mixtures into ramekins or glasses. Freeze overnight until firm. Garnish with fresh strawberries & serve.

“The food was sublime: a perfect duck terrine, studded with apricots, a little tangle of cabello d’angel (spagetthi squash) on the side, then a meaty chunk of grouper with some delicate chard-like greens and a buttery white bean sauce. The pudding was a chocolate ganache with a mandarin sorbet (citrus fruits are the Winter crop on the island), a lacy, nutty tuile, and salted caramel. The wine list is superb –especially its Mallorcan bins – service is charming, and quite why Michelin haven’t awarded it a star bafles me.”

This client just happened to be Louis Vuitton, who were planning the launch of their new store in the heart of Palma. Nothing that Louis Vuitton does can ever be considered to be mundane.
Being at the very top of the luxury market for decades, LV have their own way of doing things. For example the storefront window was to be designed by the famous artist Fabrizio Plessi along with a limited edition, collectors handbag resembling a flowing stream of liquid gold.
